Kashmiri Acacia Honey: Why It's One of India's Most Loved Honeys

If there is one honey that wins over people who “don't really like honey”, it is Kashmiri acacia honey. Pale, almost transparent and gently sweet, it is one of the most prized honeys in India, and one of the easiest to enjoy every day.

What is acacia honey?

The honey sold as “acacia honey” comes from the nectar of the black locust tree (Robinia pseudoacacia), often called false acacia. Its creamy-white blossoms open for only a short window each year, so the harvest is limited. Bees that forage mainly on these flowers make a monofloral honey with a very distinct character.

What does Kashmiri acacia honey taste like?

Light, clean and delicately floral, with a hint of vanilla and a smooth finish. It never overpowers, so it sweetens tea, coffee and lemon water without changing their taste. That's why many people use it as their everyday honey.

Flavour notes: white blossom · soft floral · light vanilla · smooth finish

Why does acacia honey stay runny?

Acacia nectar is naturally high in fructose and lower in glucose. Glucose is the sugar that forms crystals, so acacia honey can stay liquid for many months, much longer than most honeys. If it does thicken in very cold weather, that's natural. Read why honey crystallises.

Why Kashmir?

Kashmir's valleys combine a cool climate, a short flowering season and plenty of acacia trees. Honey from a single region and a single main flower keeps a consistent, recognisable taste, which is what makes Kashmiri acacia honey so sought after.

How to use Kashmiri acacia honey

  • In warm (not boiling) lemon water or green tea
  • Drizzled over Greek yoghurt with walnuts, or over fruit
  • On warm rotis, toast or pancakes
  • In salad dressings and light desserts
  • As a gentle everyday sweetener in place of sugar

How to buy good Kashmiri acacia honey

  • Look for a named origin (Kashmir) and flower (acacia), not just “pure honey”.
  • Check the ingredients say honey only.
  • Prefer raw, unheated honey, which keeps the delicate aroma.
  • Expect a very pale colour and a runny texture.
