Six single-origin BeeBlend honeys in the Pure Honey Collection tasting box

What Is Single-Origin Honey, and Why Does It Taste Different?

Pick up two jars of supermarket honey from different brands and they will probably look and taste almost the same: golden, sweet and not much else. Now taste a spoon of Kashmiri Acacia honey next to a spoon of Mustard honey. One is pale, runny and delicate; the other is bright yellow, creamy and floral. Same bees, completely different honey.

The difference is origin. This guide explains what single-origin honey is, why it tastes so different, and how to choose the right one for you.

What does single-origin honey mean?

Single-origin honey comes from one region, and usually from one main flower source, harvested and jarred without being mixed with honey from anywhere else. Like single-origin coffee or tea, it keeps the character of the place and the plants it came from.

Most mass-market honey is the opposite. It is blended from many batches, sometimes from different states or countries, then heated and filtered so that every jar looks and tastes identical all year round. Consistency is the goal, and character is the cost.

Monofloral vs multiflora honey

Single-origin honeys fall into two broad types.

Monofloral honey

Bees mostly visit one type of flower, such as acacia, lychee, mustard or fennel. The honey takes on that flower's distinctive taste, colour and texture. Examples from our range:

  • Kashmiri Acacia: very light, clear and mild, and stays runny for a long time.
  • Lychee Blossom: fragrant and fruity with a floral finish.
  • Mustard Flower: bright yellow, mildly floral, and crystallises quickly into a creamy honey.
  • Fennel: herbal and aromatic, with a soft aniseed note.

Multiflora honey

Bees forage across many wildflowers in one region. The honey is more complex and changes from season to season. Himalayan Multi-Flora honey is a good example: rich, rounded and full of wildflower character.

Why the flower changes everything

Each flower's nectar has its own mix of sugars, aromatic compounds and natural plant pigments. That is why:

  • Colour ranges from almost transparent to deep amber.
  • Flavour runs from delicate and floral to herbal, fruity or nutty.
  • Texture differs: some honeys stay liquid, others turn creamy within weeks (see why honey crystallises).

A simple rule of thumb: lighter honeys tend to be milder; darker honeys tend to be stronger.

How to choose a single-origin honey

If you want… Try
A mild honey for tea and lemon water Kashmiri Acacia
Something fragrant for fruit and desserts Lychee Blossom
A spreadable honey for toast and parathas Mustard Flower

What to look for on the label

  • A named region or flower source, not just “pure honey”
  • No added sugar, syrups, flavours or preservatives
  • Raw or unheated, so the natural aroma survives
  • A note that the honey may crystallise, which is normal for raw honey
