Does Honey Expire? How to Store Honey So It Lasts
Honey is one of the longest-lasting foods in your kitchen. Yet every jar you buy in India carries a best-before date, and many people throw out good honey because it has turned thick or cloudy. This guide explains what really happens to honey over time and how to store it so it tastes its best.
Does honey expire?
Honey that is sealed and stored well keeps for a very long time. It is low in water and naturally acidic, which makes it a hard place for microbes to grow. That is why honey does not spoil the way milk or fruit does.
So why the date on the label? Food in India must carry a best-before date, and that date is about quality, not safety. Over time honey slowly darkens, its aroma fades and it is more likely to crystallise. Our Pure Honey Collection sachets, for example, carry a best-before of 18 months from manufacture. For the best flavour, enjoy your honey within that window.
Crystallised honey has not gone off
The most common reason people think honey has expired is crystallisation. Raw honey naturally turns thick, grainy or creamy over time, especially in cooler weather. Some honeys, like mustard honey, do it within weeks; others, like Kashmiri acacia, stay runny for months.
Crystallised honey is perfectly fine to eat. To make it runny again, stand the closed jar in warm (not boiling) water for 10 to 15 minutes and stir. Read more in why honey crystallises.
How to store honey at home
- Keep the lid tight. Honey absorbs moisture from the air. Moisture is the one thing that can make it spoil.
- Store at room temperature. A kitchen cupboard is ideal. Keep it away from the stove and direct sunlight, which darken honey and dull its flavour.
- Skip the fridge. Cold speeds up crystallisation and makes honey hard to pour. There is no need to refrigerate it.
- Always use a clean, dry spoon. A wet spoon or one with food on it adds water and crumbs to the jar.
- Keep it in its jar. Glass or food-grade containers with a good seal work best.
Signs that honey has actually gone bad
It is rare, but honey can ferment if water gets into it. Throw it out if you notice:
- a sour, vinegary or alcohol-like smell
- foam or bubbles on top that keep coming back
- mould on the surface
- a thin, watery layer that smells off
Thickening, cloudiness or a white layer of crystals on their own are not signs of spoilage.
How long does an opened jar last?
An opened jar kept with the lid closed and used with a dry spoon keeps its quality well for many months. If you only use honey now and then, a smaller 160g jar or single-serve honey sachets mean you always open fresh honey.
Quick answers
Can I eat honey after the best-before date?
The date is about best quality. If the honey has been sealed, smells normal and shows no signs of fermentation, it is generally fine, but its flavour may have faded.
Why has my honey darkened?
Honey slowly darkens with age and heat. It is a natural change in colour, not a sign that it has spoiled.
Should honey be kept in the fridge in summer?
No. A cool cupboard out of the sun is enough, even in Indian summers.
Honey is not suitable for infants under 12 months.
